12 ounces Contessa medium Uncooked Tail-off Shrimp
2 tablespoons vegetable oil
1 green bell pepper, cut into strips
1 yellow bell pepper, cut into strips
1 medium onion, sliced
1 large tomato, chopped
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon crushed red pepper
1/2 teaspoon garlic powder
1/2 teaspoon paprika
2 teaspoons cumin
1 cup jack cheese, shredded
Flour tortillas, heated
Guacamole, sour cream and salsa if desired
Heat oil in a large skillet or wok over medium heat until oil is hot.
Add bell pepper and onion and cook for 3 minutes.
Add shrimp, tomato, red pepper, salt, paprika, garlic powder and cumin.
Cook until shrimp turn pink.
Add 1/2 cup of fajita mixture into heated tortilla.
Top with desired toppings.
