Shrimp Fajitas

Ingredients:



  • 12 ounces Contessa medium Uncooked Tail-off Shrimp




  • 2 tablespoons vegetable oil




  • 1 green bell pepper, cut into strips




  • 1 yellow bell pepper, cut into strips




  • 1 medium onion, sliced




  • 1 large tomato, chopped




  • 1/4 teaspoon salt




  • 1/4 teaspoon pepper




  • 1/4 teaspoon crushed red pepper




  • 1/2 teaspoon garlic powder




  • 1/2 teaspoon paprika




  • 2 teaspoons cumin




  • 1 cup jack cheese, shredded




  • Flour tortillas, heated




  • Guacamole, sour cream and salsa if desired




Steps:



  • Heat oil in a large skillet or wok over medium heat until oil is hot.




  • Add bell pepper and onion and cook for 3 minutes.




  • Add shrimp, tomato, red pepper, salt, paprika, garlic powder and cumin.




  • Cook until shrimp turn pink.




  • Add 1/2 cup of fajita mixture into heated tortilla.




  • Top with desired toppings.
