3-4 servings
12 ounces Contessa (any-size) Uncooked Tail-off Shrimp
3/4 cup chicken broth
1 tablespoon cornstarch
1 tablespoon soy sauce
1 tablespoon sherry
1 teaspoon salt
1 teaspoon sugar
4 teaspoons curry powder
3 tablespoons olive oil
1 garlic clove, minced
1 medium onion, diced
1 green bell pepper, seeded and cut into 1 inch pieces
Combine chicken broth, cornstarch, soy sauce and sherry, set aside.
Place shrimp in a bowl and sprinkle with salt, sugar, curry powder and mix well. Heat a large skillet over high heat.
Add oil and garlic when oil is hot.
Add shrimp and cook for 3 minutes.
Add green bell pepper and onion and cook for 1 minute.
Add the sauce and stir, cook for 2 minutes or until sauce bubbles.
Serve over rice.
