Shrimp Curry

Ingredients:



  • 12 ounces Contessa (any-size) Uncooked Tail-off Shrimp




  • 3/4 cup chicken broth




  • 1 tablespoon cornstarch




  • 1 tablespoon soy sauce




  • 1 tablespoon sherry




  • 1 teaspoon salt




  • 1 teaspoon sugar




  • 4 teaspoons curry powder




  • 3 tablespoons olive oil




  • 1 garlic clove, minced




  • 1 medium onion, diced




  • 1 green bell pepper, seeded and cut into 1 inch pieces




Steps:



  • Combine chicken broth, cornstarch, soy sauce and sherry, set aside.




  • Place shrimp in a bowl and sprinkle with salt, sugar, curry powder and mix well. Heat a large skillet over high heat.




  • Add oil and garlic when oil is hot.




  • Add shrimp and cook for 3 minutes.




  • Add green bell pepper and onion and cook for 1 minute.




  • Add the sauce and stir, cook for 2 minutes or until sauce bubbles.




  • Serve over rice.
