Shrimp Ceviche

Ingredients:



  • 12 ounces any size Contessa Cooked Tail-off Shrimp, thawed




  • 1/2 yellow onion, chopped




  • 1/4 cup cilantro, chopped




  • 1/4 cup lime juice




  • 1 tomato, seeded and diced




  • Salt to taste




  • Jalapeno pepper (optional)




Steps:



  • In a large mixing bowl combine the onions, tomatoes, cilantro, and lime juice.




  • Add shrimp to the mixture.




  • Allow mixture to chill for 10 minutes.




  • Garnish with jalapeno pepper (optional).




  • Serve with corn chips.
