12 ounces any size Contessa Cooked Tail-off Shrimp, thawed
1/2 yellow onion, chopped
1/4 cup cilantro, chopped
1/4 cup lime juice
1 tomato, seeded and diced
Salt to taste
Jalapeno pepper (optional)
In a large mixing bowl combine the onions, tomatoes, cilantro, and lime juice.
Add shrimp to the mixture.
Allow mixture to chill for 10 minutes.
Garnish with jalapeno pepper (optional).
Serve with corn chips.
