12 ounces Contessa large Uncooked Tail-on Shrimp
2 cups pineapple
1 red bell pepper, seeded and diced
1 green bell pepper, seeded and diced
2 jalapeno peppers, seeded and diced
1 1/2 tablespoons fresh ginger root, minced
1/4 pound butter, cut into pieces
1/4 cup brown sugar
2 tablespoons lemon juice
1 cup rice
Preheat gas or charcoal grill.
Take 4 pieces of aluminum foil (12 x 12 in) and place 1/2 cup of the pineapple onto the center of each piece of aluminum foil.
Place the shrimp on top of the pineapple.
Mix all the peppers and ginger root together.
Place on top of shrimp and drizzle the brown sugar on top.
Fold the aluminum foil to make an enclosed packet. Leave room for the heat circulation.
Place the packets on the grill and cook for 8-10 minutes.
Serve over rice.
