Pineapple Sugar Shrimp

Ingredients:



  • 12 ounces Contessa large Uncooked Tail-on Shrimp




  • 2 cups pineapple




  • 1 red bell pepper, seeded and diced




  • 1 green bell pepper, seeded and diced




  • 2 jalapeno peppers, seeded and diced




  • 1 1/2 tablespoons fresh ginger root, minced




  • 1/4 pound butter, cut into pieces




  • 1/4 cup brown sugar




  • 2 tablespoons lemon juice




  • 1 cup rice




Steps:



  • Preheat gas or charcoal grill.




  • Take 4 pieces of aluminum foil (12 x 12 in) and place 1/2 cup of the pineapple onto the center of each piece of aluminum foil.




  • Place the shrimp on top of the pineapple.




  • Mix all the peppers and ginger root together.




  • Place on top of shrimp and drizzle the brown sugar on top.




  • Fold the aluminum foil to make an enclosed packet. Leave room for the heat circulation.




  • Place the packets on the grill and cook for 8-10 minutes.




  • Serve over rice.
