4-5 servings
12 ounces Contessa large Uncooked Tail-On Shrimp
4 garlic cloves, chopped
3 tablespoons parsley, chopped
3 tablespoons extra virgin olive oil
Zest of 1 lemon, reserve juice
Salt and pepper to taste
Wooden skewers, soaked in water
In a large mixing bowl, combine all ingredients and mix well.
Marinate shrimp for 20-25 minutes in refrigerator.
Once marinated, place about 5 shrimp per skewer.
On a grill, cook for 2-3 minutes or until shrimp turn orange on the outside and opaque white on the inside.
Sprinkle with lemon juice and serve.
