Italian Sausage Minestrone

  • 1 package Contessa Italian Sausage Rigatoni

  • 6 cups low-sodium chicken broth

  • 1 can (15-ounce) cannellini beans, rinsed and drained

  • 4 ounces baby spinach, washed

  • 4 tablespoons grated Parmesan cheese


  • Place contents of Contessa MicroSteam Italian Sausage Rigatoni into large saucepan.

  • Add chicken broth and beans; bring to a boil.

  • Reduce heat and simmer for 8-10 minutes or until ingredients are heated through.

  • Stir in spinach; simmer 1 minute until wilted.

  • Garnish with Parmesan cheese.
