Greek Shrimp

Ingredients:



  • 12 ounces Contessa large Uncooked Tail-Off Shrimp




  • 3 tablespoons olive oil




  • 1 tablespoon garlic, minced




  • 3/4 cup fresh tomatoes, chopped




  • 1/4 cup dry white wine




  • 1 tablespoon fresh parsley, minced




  • 1/2 teaspoon dried oregano, crushed




  • 1/2 teaspoon salt




  • 2 ounces feta cheese




  • Black pepper to taste




Steps:



  • Heat oil in a large skillet over medium heat.




  • Add garlic and cook until the garlic colors.




  • Add tomatoes, wine, 1/2 of the parsley, oregano, salt and pepper.




  • Cook until sauce thickens to a puree and stir occasionally.




  • Add the shrimp and cook for 5 minutes.




  • Add the feta cheese and stir very gently for 2 minutes.




  • Garnish with the remaining parsley and serve.
