12 ounces Contessa large Uncooked Tail-Off Shrimp
3 tablespoons olive oil
1 tablespoon garlic, minced
3/4 cup fresh tomatoes, chopped
1/4 cup dry white wine
1 tablespoon fresh parsley, minced
1/2 teaspoon dried oregano, crushed
1/2 teaspoon salt
2 ounces feta cheese
Black pepper to taste
Heat oil in a large skillet over medium heat.
Add garlic and cook until the garlic colors.
Add tomatoes, wine, 1/2 of the parsley, oregano, salt and pepper.
Cook until sauce thickens to a puree and stir occasionally.
Add the shrimp and cook for 5 minutes.
Add the feta cheese and stir very gently for 2 minutes.
Garnish with the remaining parsley and serve.
