Eggplant Roll-Ups

  • 1 package Contessa Chicken Fried Rice

  • 1 large eggplant

  • Olive oil

  • 1 tablespoon soy sauce

  • 1 cup bean sprouts


  • Thinly slice eggplant lengthwise and place on a baking sheet. Drizzle with olive oil and season with salt and pepper, to taste. Bake for 8 to 10 minutes. Set aside.

  • Prepare Contessa Chicken Fried Rice per instructions on package, omitting the sauce. Mix in soy sauce.

  • Place 3 to 4 bean sprouts one-third of the way from one end of eggplant slice. Add 2 tbsp. Chicken Fried Rice on top, then roll.

  • Place roll-up on a plate and drizzle with sauce from packet
