Chipotle Shrimp Cakes

8 Patties

Ingredients:



  • 16 ounces Contessa Cooked Tail-off Shrimp, coarsely chopped




  • 2/3 cup chipotle chili flavored mayonnaise




  • 2 eggs




  • 1 1/3 cup plain bread crumbs




  • 1 tablespoon green onion, minced




  • 1 tablespoon cilantro, stems removed




  • 1/4 teaspoon hot pepper sauce




  • 2 tablespoons smoked almonds, chopped




  • 1 tablespoon olive oil




  • 1 tablespoon butter




  • 1 large mango, peeled and cut into cubes




  • Garnish with cilantro sprigs and red onion (optional)




Steps:



  • In a medium bowl combine shrimp, mayonnaise, eggs, onions, cilantro, hot pepper sauce, almonds, and half the bread crumbs together.




  • Mix well.




  • Shape mixture into 8 patties.




  • Coat each patty with remaining bread crumbs.




  • Heat oil and butter in a large skillet over medium heat.




  • Once the butter has melted, cook each shrimp patty until they turn golden brown on each side.




  • Garnish with mango cubes, cilantro, and sliced red onions.
