Chicken Stir-Fry Frittata

4-6 servings



  • 1 bag Contessa Chicken Stir-Fry

  • 8 large eggs

  • 3/4 cup half and half

  • 1/2 teaspoon black pepper

  • 1/4 cup romano or parmesan cheese, grated

  • 1 tablespoon fresh thyme leaves


  • Prepare Contessa Chicken Stir-Fry as directed on package.

  • In a separate bowl combine eggs, half and half, and pepper. Mix until mixture becomes frothy.

  • Combine the two mixtures together in a large frying pan and sprinkle with cheese and thyme.

  • Cook for additional 5-6 minutes or until the mixture is set.

  • Remove mixture, cut and serve hot or cold as desired.
