Baja Style Shrimp Soft Tacos

Ingredients:



  • 12 ounces Contessa medium Uncooked Tail-off Shrimp




  • 1/2 cup Mango chunks




  • 2 tablespoons fresh cilantro, chopped




  • 1 tablespoon olive oil




  • 2 tablespoons taco seasoning mix




  • 1 teaspoon garlic pepper




  • 2 cups cabbage, shredded




  • 1 cup salsa




  • 6 flour tortillas




  • 1 small onion, diced




Steps:



  • In a medium bowl combine salsa, mango and cilantro, mix together and set aside.




  • In a large bowl combine shrimp, olive oil and toss.




  • Add the taco seasoning, garlic pepper and toss.




  • Over medium-high heat cook shrimp in a large skillet. Cook for 3-4 minutes or until shrimp turns pink.




  • Top warm tortillas with shrimp mixture, cabbage and salsa.
