"Combining Contessa's Ragin' Cajun Shrimp and staple items in my kitchen is how I came up with this recipe. The shrimp are light, flavorful and ready in minutes," says the registered nurse. "All the ingredients really complement each other and the tostadas are light and refreshing for summer. Karen Gulkin's Creole Shrimp Tostadas with Avocado-Orange Salsa earned her 1st place in Contessa's Specialty Seafood Contest, $500 in cash, Contessa food products and merchandising.

"I like to have fun in the kitchen and try new things." Shrimp is the perfect protein because it's quick, easy to prepare and healthy. "You can make a salad, pasta or tacos- there's just so much you can do."
