Roxanne Chan is no stranger to the kitchen. "I'm in the kitchen cooking every night. There is nothing I won't try." However, entering and winning Contessa's Holiday Shrimp Contest holds significance.
"Growing up, my family was very poor, but at Christmas we always had Shrimp Cocktail on the table. That was our big splurge for the year." Reminiscing about her childhood, Chan added
a twist to that classic recipe by incorporating sunny citrus ingredients. "It was so easy to throw together, mainly because of the already peeled, cleaned and cooked shrimp."
Chan beat out thousands of other entrants with her Spanish Shrimp Cocktail recipe, earning her $500 in cash, Contessa products and merchandising.
Chan admits when she first got married, she did not know how to cook. "I am completely self taught." Encouraged by her husband, she alters recipes from cookbooks, adding her own ingredients
and the rest is pretty much history. The Albany, California resident, who has won numerous cooking contests is humble about her work. "It's a hobby. It makes me feel good when I make something
that people enjoy - especially my family."
"I love Contessa Shrimp. It's my favorite seafood and so very versatile," said Chan, "and with this recipe, it's easy to put together. The colorful, fresh flavors will stimulate the appetite, and the
convenience of the product will make this dish a real crowd pleaser."
