Zucchini And Shrimp Pasta

3 to 4 servings

Ingredients:
  • 1 package Contessa Shrimp Scampi and Linguini

  • 1 zucchini, sliced

  • 1 medium tomato, diced

  • 1 tablespoon extra virgin olive oil

  • 8 ounces pasta, cooked

Steps:
  • Heat olive oil in a large skillet over medium-high heat.

  • Sautee zucchini for 3 minutes.

  • Add Contessa Shrimp Scampi and tomato. Sautee for 3 to 4 minutes until shrimp turn opaque white inside. Reduce heat.

  • Add cooked pasta with 1 tbsp. pasta water and simmer for 1 minute.
