2010 “Brown Bag” Recipe Contest Winner – Suzanne Banfield
1 package Contessa Italian Sausage Rigatoni
6 cups low-sodium chicken broth
1 can (15-ounce) cannellini beans, rinsed and drained
4 ounces baby spinach, washed
4 tablespoons grated Parmesan cheese
Place contents of Contessa MicroSteam Italian Sausage Rigatoni into large saucepan.
Add chicken broth and beans; bring to a boil.
Reduce heat and simmer for 8-10 minutes or until ingredients are heated through.
Stir in spinach; simmer 1 minute until wilted.
Garnish with Parmesan cheese.
