1 package Contessa Chicken Chow Mein
1 tablespoon cooking oil
14 ounce can chicken broth
2 1/4 cups water
5 scallions, chopped into 1-inch pieces
2 tablespoons cornstarch
1 egg, slightly beaten
Heat oil in a large soup pot over high heat.
Add chicken and vegetables. Stir-fry for 1 to 2 minutes.
Add chicken broth, 2 cups water, sauce from packet, and scallions. Bring to a boil.
Dissolve cornstarch into remaining 1⁄4 cup water.
Add to pot and stir until soup thickens.
Slowly pour in egg, stirring once.
Add noodles and season with salt and pepper to taste. Serve immediately.
