Contessa Contessa shrimp has no saturated fat. It is saturated fat — not cholesterol — that is most responsible for raising your blood’s cholesterol level. A high level of cholesterol (not to be confused with dietary cholesterol) is responsible for heart disease. LDL (or “bad” cholesterol) can build up, clogging arteries. HDL (or “good” cholesterol) has the opposite effect, cleansing arteries. Studies confirm that consuming shrimp can actually raise your levels of HDL, which in turn will lower your cholesterol level and minimize the risk of heart disease. A Harvard School of Public Health study suggests that diets rich in HDL may also defend against Alzheimer’s disease.
